Specializing in Nikkei cuisine, Chef Juan started his career with one of the most renowned Japanese gourmet restaurants in his hometown, before globetrotting for the various restaurants in Brazil, China, Uruguay, Turkey, Qatar, and eventually in Jakarta - Indonesia with Henshin.
