The Uppercut is under the lead of Chef Sulistiyo Negoro as a Junior Sous Chef. Usually called Chef Tyo by his team, he's a friendly, organized, and hardworking person. He is kind but assertive and always pushes his team to be creative. His vision is to always think out of the box and to make Uppercut the best steakhouse in town. Chef Tyo joins JW Marriott Surabaya in September 2014 as Pavilion's Chef de Partie. As his skill improved, he moved to Uppercut and be there until now. Specialty in a steak-dish, Chef Tyo and Uppercut's team serves the best grade of dry-aged prime wagyu beef.
