Chef Chong Loong Fatt or friendly greeted by the call of Chef Afatt, joined the JW Marriott Surabaya as Chinese Dim Sum Chef in October 2009. He has played a pivotal role in building up Tang Palace’s reputation for having Surabaya’s finest dim sum lunches. Motivated by his mother who is a very good chef at home, and teaches him many delicious foods. His first contact with food was the dim sum and fell in love instantly. He begin his journey as Chef at 21 years old. Focus, persevered and hardworking is his strongest personality. That’s why he really loved by his team, and his vision is to make Tang Place as Michelin Star in the near future. Cooking for him is a kind of passion and a ritual, cooking dim sum is a kind of art that Chef Affat always takes it seriously; on the other hand, it becomes part of him and it is culture.
