Pink Pearl draws inspiration from the legend of Madame Pearl Collins, a one-time resident of JW Marriott Phu Quoc Emerald Bay known as the Lamarck University in 1920. As the story goes, in her luxurious pink mansion, lavish dinner parties and grand celebrations were the order of the day at the mythical academy of learning. Pink Pearl continues this tradition of warm hospitality with a generous dash of glamour and live music.

The dining area incorporates a bold mix of opulent furnishings, eye-catching patterns and bright splashes of pink. Dramatically high ceilings and a curated collection of sculptures pay tribute to Madame Collins’s eccentric, fun-loving spirit. Guests also have the option to dine alfresco in the outdoor garden, or in one of the five private rooms. An exclusive ten-seater wine cellar conveys a darker mood, fitting for intimate gatherings and quiet conversations.

Barbarie Duck Breast

Barbarie Duck Breast is as far away from classical French cooking as you can get, with chef Eric is known for his modernist and experimental cuisine. Canette de barbarie filet from Challans, Duck Barbajuan, pumpkin puree with hazelnut butter, cocoa nib, girolles, duck juice with special 5 Vietnamese's spices. Unusual flavour combinations and unfamiliar textures appear on the plate.

Born in Nantes, France Chef Eric Drougeux started his career in the different luxury brewery and gastronomic restaurants in his native area, where he was trained in classic French cooking techniques. He later joined the prestigious St. Regis Bora Bora Resort in French Polynesia as sous chef for 3 years, working in the Lagoon Restaurant by 2 Michelin starred Chef Jean Georges. He had also worked under the authority of 2 Michelin starred Chef Jean-Marc Banzo. More recently, he joined the team at Gstaas, Switzerland as Executive Sous Chef for the Park Hotel. Building on his reputation as one of the most creative chefs, Eric has been recruited by JW Marriott Phu Quoc Emerald Bay to take over Pink Pearl, the property’s flagship restaurant. Reflecting Eric’s training, Pink Pearl offers guests a selection of reimagined classic French way. The menu is based on seasonal products and “farm to table” concept, showcasing the chef’s ability to innovate with “Avant gardiste” techniques and old school methods together with his advanced notions of pastry skills.
