Is this Bangkok's Most Extravagant Oyster Omelette?

The oyster omelette is a dish that is synonymous with Bangkok. You can probably find it on every block throughout the entire city. 

 

And while vendors are whisking, frying and plating this street food hero across the Thai capital’s bustling streets, there’s been very little evolution to this classic dish that originally spread throughout Southeast Asia with the boats of Chinese traders.

But Bangkok chef Joe Weeraket Nilayon is taking the oyster omelette off the streets and into a new era. The executive chef at restaurant Paii is sending the street staple to new heights using premium French oysters. Chef Nilayon says the Jean-Paul oysters from Normandy, France, lend a sweetness and creaminess that is the perfect match for an omelette.

As executive chef at Paii, Nilayon has the exciting job of sourcing the very best local and imported seafood for the kitchen team to work with. Think fresh scallops from Hokkaido in Japan and black mussels from New Zealand, plus local favourites like mud crab from Samut Songkhram and banana squid from Chonburi.

 

Set in one of Bangkok's most iconic landmarks, the 1889-built House on Sathorn, restaurant Paii gives the street food staple an appropriate glow up without losing its roots.

The modern Thai seafood-focused restaurant’s extravagant omelette adds an extra twist to the Thai classic as the chefs cook it French-style with added cream, finishing it off with a healthy serving of spicy chilli sauce on the side, of course. “I grew up eating oyster omelettes. It’s something my mum cooked at home, and something I cook at home for myself. This is a fun way to recreate a dish that all Thai people know and love,” says Nilayon.
